Ginger Cereal Biscuits



Ginger cereal biscuits make a great snack as the cereals make you feel fuller for longer, as well as slowing down the release of sugar into your body, so you will get a steadier release of energy over a longer period of time.

These biscuits are crispy on the outside, chewy on the inside. Cereals and golden syrup make these a distant cousin to the flapjack, which equals flapjack-childhood-nostalgia bonus points. And ginger just works.

These biscuits are easy to make and keep well for several days in an airtight container.
Cooking Instructions

1. Preheat the oven to 170°C. Grease the baking trays.
2. Place the butter, sugars and golden syrup in a small saucepan set over a low-medium heat. Warm, stirring from time to time, until all the ingredients are combined. Remove from the heat.
3. Sift the flour and salt into a large mixing bowl. Stir in the lemon zest, Farmers Delight Cereals, chopped stem ginger and ground ginger until well mixed.
4. Pour over the melted butter mixture and stir until all the ingredients are combined and no streaks of flour remain.
5. Take walnut sized pieces of the dough and flatten them with your hands to form rounds about 1cm thick and 6cm in diameter. Place onto the prepared tray/ trays.
6. Bake in the preheated oven for 16-18 minutes until a good golden brown colour and starting to firm up around the edges.
7. Cool the biscuits on the tray for about 10 minutes before transferring to a wire rack to cool completely.
Ingredients

110g Farmers Delight Cereals
110g butter
45g sugar
30g soft brown sugar
1 tbsp golden syrup
110g self-raising flour
Pinch salt
Finely grated zest of 1 lemon
5 balls of stem ginger (preserved in syrup)
2 tsp ground ginger
